Hugo is a child of the Corbières. His grandfather Patrick Saulnier-Blache owned the Campagne de Cisséron between 1950 and 1975. He was also the first to develop an analysis laboratory in partnership with INRAE and the Caviste chain Nicolas. Hugo studied in Beaune at the Oenology school. He did his apprenticeship with: - Pascal Roblet Monnot, 1 year, a biodynamic estate since 1997. - Jean-Claude Ramonet, 1 year, a well-known estate in Chassagne-Montrachet. He made his return to the Corbières in 2017, where he worked at several estates and wineries before making his final move in 2021 with a first attempt at a Cuvée. Asphodèle is mostly Cinsault and a splash of Syrah from Lagrasse. From fresh and vibrant soils that give the wine the Mediterranean herbs and spice, mixed with incredible energy.

Family owned Acetaia del Cristo produces balsamic vinegar according to time honoured traditions and in full compliance with PDO (Protected Designation of Origin) regulations - from cultivation of organically grown grapes to must cooking and the delicate drawing, decanting and topping-up operations.
The family has been producing balsamic vinegar for four generations. It utilizes its closely guarded recipes (previously restricted to use for the family) to become the most important world producer of Traditional Balsamic Vinegar of Modena producing 2,000 casks per year.
