Pascal Jolivet's winery, established in 1987, stands as one of the most vibrant estates in France's Loire Valley. Nestled in Sancerre, the domaine possesses over 120 acres of premium vineyards spanning the appellations of Sancerre and Pouilly-Fumé.
In addition to its estate holdings, the domaine acquires fruit from select terroirs in the region, such as 'les Caillotes,' 'le Chêne Marchand,' 'les Terres Blanches,' 'les Griottes,' and 'le Clos du Roy.'
Sancerre wines, originating from clay, limestone, and flint soils, exhibit a floral and elegant character distinct from wines of the same varietal elsewhere. Pouilly Fumé wines, hailing from the north bank of the Loire, boast diverse subsoils from the Ice Age, offering characteristic flinty aromas (pierre à fusil). They tend to be slightly rounder and creamier compared to the bone-dry and more floral Sancerre wines grown on the south bank.
Pascal Jolivet also crafts Attitude, a Sauvignon Blanc produced on a 57-acre estate west of Sancerre in Touraine. Planted in two distinct terroirs, Chémery with limestone soils and Anger sur Cher with sandy soils, the estate produces a range of Attitude wines, including a Pinot Noir and a Rosé—a blend of Pinot Noir, Gamay, and Cabernet. The Attitude trio embodies the same winemaking philosophy, care, and focus as all of Pascal Jolivet’s wines.
A strong advocate of natural winemaking, Pascal Jolivet employs environmentally friendly techniques in both the vineyard and cellar. The estate's philosophy revolves around allowing nature to take its course as much as possible. Wild yeasts ferment the juices in stainless steel tanks with thermoregulation. Pascal Jolivet's new winemaker, Valentina Buoso, upholds the estate's philosophy and practices.
