This Blanc de Blanc is exceedingly rare and is aged for 5 years on lees and full of tension, and chalky drive that I adore. Aromas of lemon curd, white peach, crushed chalk, and warm brioche leading to a palate that glides effortlessly from citrus and cream to salt-tinged minerality. It’s luxurious without showiness. When it comes to pairing, you can drink it with oysters, but it has the power to go well with roast chicken, pork chops or even with rich fish. How is this wine at this price?!
