    "The 2016 7 Fuentes will give you an idea of how the vintage behaved at Suertes del Marqués. They did multiple fermentations, most in concrete but some in stainless steel without temperature control—as the grapes were cooled down—and with indigenous yeasts. They used around 10% full clusters. Some 60% of the volume matured in concrete for nine months, while the rest was in used 500-liter oak barrels and one new 4,500-liter oak foudre. This has even less color than the 2015, and feels sharp, a little raw, very volcanic and peppery, and it feels like there's one extra step in complexity and depth here. The palate is really nice, electric and, curiously enough, seems sharp, but at the same time, it has volume. This could very well be my favorite vintage of 7 Fuentes to date."

    Cave Spring`s Blanc de Blancs is made entirely from Chardonnay grapes, which are grown in the limestone-clay soils of their vineyards along the benchlands of the Niagara Escarpment. Vinified in the Traditional Method, it was fermented and aged sur lie in bottle for a minimum of 30 months prior to disgorging. The result is a dry, Brut-style sparkling wine exhibiting delicate effervescence mineral nuances that are true to its cool-climate origins. WINE ACCESS: This wine is the flagship for Cave Spring's increasingly important sparkling wine focus, which now involves four labels. It won a Lieutenant-Governor's Award in 2012. This 100% chardonnay was aged for three years, building subtle almond complexity into the dried apple, lemon and shortbread aromas. It is light-bodied, lively, gentle, delicate and a touch sweet, yet built on a beam of mineral acidity. There's excellent length on the finish. This is a terrific blanc de blanc. 91 points. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only '13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions.
