Cerf Volante is a range of two wines that introduces to the magic that the soils of their region can provide. The white is a blend of mostly Chardonnay, with a touch of Tressalier coming from limestone studded soils. It's driven, long, elegant, and supremely clear. To me it is a blend of what I love from Chablis, and from the very best of Sancerre. To me this wine is unique in the Loire for the freshness and nobility that it offers.
