Tasting Notes

Ripe orchard and citrus fruits on the toasty, mineral- and floral-accented nose and on the palate. Rich but lively, with excellent clarity and back-end cut. The toasty note comes back on the finish, which features suave vanilla and honey notes. Plenty rich but comes off lithe and precise.

The Producer

Tucked away in the quiet village of Cumières, you'll find a discreet and unique winery that doesn't boast any flashy signs. The only hint of its presence is a modest doorbell sign. However, once you step through those unassuming doors, you'll discover one of Champagne's hidden gems.

Georges Laval embarked on his journey of crafting his own champagnes in 1971, and his son Vincent has been at the helm of the operation since 1996. The estate spans a mere 2.5 hectares of vineyards, with half a hectare devoted to Pinot Meunier in Chambrecy, which is supplied to a wine merchant. The remaining two hectares are spread across seven plots in Cumières. The vines here are aged over 30 years on average.

Laval has been committed to organic viticulture since 1971, a dedication that has earned them the Ecocert certification. Laval believes that the additional effort involved in this approach yields superior results.

Laval's wines are harvested only when they reach perfect ripeness, with minimal chaptalization. They undergo maturation in wooden barrels, utilizing native yeasts. Bottling takes place at a later stage, typically around 10 months after the harvest, and there's no fining, filtering, or cold maceration. The use of sulphur is kept to a minimum.

In good years, Laval produces a mere 10,000 bottles, and these are quickly sought after by a select group of aficionados. If you happen to acquire one of their bottles, your taste buds will be richly rewarded. Laval's philosophy of natural winemaking and aging results in champagnes with intense personalities that truly reflect the unique terroir of Cumières. Most of their champagnes are released without any added sugar (dosage), and their ripe, deep flavors lend them an exceptional harmony and complexity. The forefront of these champagnes is characterized by their minerality and full-bodied character.
