"And now for something completely different—a clone of Chardonnay known for its heady, perfume-like aromas. This opens with room-filling aromas of orange blossom, fresh-grape nuances and a distinctive musk-like perfume. A surge of viscous, slightly off-dry ambrosia coats the palate with white nectarine and tropical fruit interwoven with Meyer lemon and notions of peach skin. It’s mid-full weight with generous mouth feel and a lingering balanced aftertaste with just enough acidity to keep it crisp and refreshing. Another triumph for Cave Spring Cellars and winemaker extraordinaire, Angelo Pavan. Sip on its own or pair with grilled or pan-seared seafood."

For Cave Spring Vineyard, the compounding effect of four decades of carefully considered decisions has earned the winery the reputation of a proud pioneer, brave enough to try new things, and patient enough to await the rewards revealed with every passing vintage.Their evolution was guided by the selection of the cool-climate varieties to the rigorous commitment to sustainability, the utilization of exclusively indigenous yeasts and neutral oak in the cellars, and the constant crusade for more demanding industry standards.
Recalling the joy his father and son had found tapping into their rural Italian roots to revive a small vineyard in the 1960s, John Pennachetti Sr knew that the original abandoned orchard set against the Niagara Escarpment’s limestone cliffs had the potential to be something so much more for his family. Today, more than four decades after John and his sons took a chance and planted some of Niagara’s first Riesling and Chardonnay vines on that plot of land, Cave Spring Vineyard serves as a constant reminder of the good things that can happen when the past is honoured in forging a new future.
