This sleek, tensile Premier Cru Chassagne is a highlight of Fabrice Bouard’s beautifully delineated lineup. What is fascinating is that like other elite white Burgundies, after an hour or so in a decanter, the wine actually “firms up” a bit, showing more of its crispness and minerality the longer it’s open. There is an intense nose of pear and lime zest, with white flowers and cold butter. There's a glossy texture to the wine, augmented by a beautiful structure and brisk acidity. There's beautiful layering of savory almond and custard elements with ripe citrusy fruit. Accessible and quite hedonistic now, and likely for a long time to come. A wine to stockpile if possible, but alas quantities are limited.
