The decision to pair the food and service of Opus restaurant—which I can assure you is one of the greatest restaurants in Toronto, boasting a supremely distinguished wine cellar—was an absolute no brainer. Tony and Mario Amaro are true restaurateurs; consummate hospitality professionals, something that is sadly disappearing in today's dining culture. Their partnership with Chef Jason Cox, hidden just outside Yorkville is our favourite restaurant in Toronto. The food is sensational, but most importantly to us, is not over-complicated. There is no foam, no smoke and mirrors. No, what you will eat at Opus is all about pristine ingredients done simply, and that to us is great food.
Tony has built the greatest wine cellar in Canada, having been awarded Wine Spectator's Grand Award 20 years in a row, and is the ONLY Toronto restaurant that has it, and one of only 97 in the world. He has three decades worth of not merely opening, but drinking these wines. Many of the greatest collectors and enthusiasts have enormous trust in him, and buy what he buys.
