Rotem & Mounir Saouma operate an estate located in Châteauneuf-du-Pape, situated in the Southern Rhône. The couple, after establishing Lucien Le Moine, a small négociant-éléveur in Burgundy during the late 1990s, decided to create wines from their own land. Acquiring vineyard parcels in Burgundy proved challenging, and they wanted to avoid direct competition with their partner growers and friends.
In the mid-2000s, they shifted their focus to the Châteauneuf-du-Pape region, despite its own difficulties. Their approach involved collaboration with SAFER, the government-run land sales intermediary, concentrating on lots that others were not interested in. While the nine parcels they acquired were often in poor condition, they gained access to well-situated vines. They now own 8.4 hectares (20.75 acres) in Châteauneuf-du-Pape, with additional holdings in the Côtes du Rhône-Villages AOP.
In the cellars, the production process for white wines involves intense pressing and hyper-oxidized juice. The wine undergoes slow and gentle fermentation on the lees, with some wines continuing malolactic fermentation even after 16 months. The new ferment may initially appear dark brown but gradually turns conventionally pale during maturation. These techniques aim to ensure a long shelf life once bottled.
Certain reds are crafted by placing whole bunches in amphorae, left untouched for a year. The Omnia Châteauneuf is produced using large wooden foudres, 500-liter barrels, cement tanks, and even some eggs.
