Fourteen generations ago, the Raffault family, led by Jean-Maurice Raffault and Rodolphe Raffault, ventured into vine cultivation in Chinon. Their ancestor, Mathurin Bottreau, initiated this legacy in 1693 by acquiring the first parcel of vines. Presently, Domaine Jean-Maurice Raffault oversees 50 hectares of organically farmed vines across seven communes.
The late Jean-Maurice Raffault, a prominent figure in Chinon, significantly impacted local winemaking practices upon assuming control of the family domaine in 1973. Departing from polyculture, he exclusively focused on cultivating wine grapes. Starting with the 4.5 hectares inherited from his father, he strategically purchased and planted some of Chinon's finest sites, expanding the domaine to 50 hectares. Notably, he pioneered the vinification of each parcel separately, ensuring the distinctiveness of each terroir and labelling the wines with the names of individual sites—a groundbreaking practice at the time. Rodolphe Raffault took the reins in 1997, following his oenology studies at Dijon University.
In terms of vinification, the maceration period spans 15 to 28 days. Rodolphe upholds the tradition of aging Chinons in neutral oak casks aged over 10 years. The expansive cellar, housing 900 barrels, stands as the region's largest. Maturation unfolds over 18 months in three extensive caves carved into limestone cliffs, maintaining a constant temperature of 56 degrees and 85% humidity. Racking is executed in the traditional barrel-to-barrel manner, aiding in wine clarification, followed by fining with egg whites. Notably, the wines remain unfiltered, and all productions attained organic certification in 2021.
