Meet Steve Innocente, the head brewer extraordinaire. Armed with a Ph.D. in Molecular Biology and a Post-Doctoral Fellowship focused on studying yeast, Steve seamlessly blends scientific expertise with an unbridled passion for crafting intensely hopped beers, transforming the brewing process into a true art form.
In 2004, Steve made the leap with his family to Scotland, immersing himself in a post-doctoral stint at the University of Edinburgh, where his research delved into Saccharomyces cerevisiae, the illustrious brewing yeast. While he had dabbled in brewing back in Canada, it wasn't until he found himself expecting his fourth child that brewing regained its prominent place in his life. The bustling Edinburgh pub scene took a backseat, leading Steve to embrace contract brewing at Alechemy Brewing. This pivotal moment set the stage for the birth of Innocente Brewing Company.
In a whirlwind of creativity, Steve introduced his inaugural beer, 'Innocente Bystander,' a 4% ABV, 125 IBU American pale ale that quickly became a sensation in local pubs. Complementing this triumph were a premium lager named 'Lost' and an IPA called 'Conscience,' showcasing the breadth of Steve's brewing prowess. Returning to Canada in 2012, Steve, along with his parents and brother, officially opened the doors to the Innocente Brewing Company in May 2014, inviting the public to savour the fruits of their brewing labour.
