"A massive, gorgeously rich and decadent version of this cuvee, the 2014 Estate Cuvee (50% Cabernet Sauvignon, 35% Syrah and 15% Petit Verdot) is reminiscent of a 2005 Pomerol with its huge bouquet of cassis, toasted spice, graphite, damp earth and leafy herb aromas and flavors. Thick, full-bodied, unctuous and palate-saturating, yet still with purity and grace, it's an insanely good Bordeaux blend (or close) from Paso Robles that will have two decades of overall longevity."

The vineyard location was chosen after a thorough examination of the area, aligning with owner Stephan Asseo's expertise as a vigneron. He quickly preferred the west side of Paso Robles due to its rolling hills and genuine terroir quality. The 127-acre property he selected comprises multiple hills of varying elevations, intricate soils, and efficient water drainage. Asseo considers these terroir aspects crucial for producing the high-quality fruit needed to craft the envisioned wines for L'Aventure.
The selection of rootstock maximizes the terroir's benefits, focusing on those with prolonged, gradual maturation and deep root systems. Planting was executed with a very high density, exceeding 2,000 plants per acre, to ensure optimal balance among water quantity, sun exposure, and soil. The irrigation system was specifically designed to irrigate each row separately.
In 2016, they accomplished a lengthy yet thrilling project: underground caves. With these caves in place, external energy, such as air conditioning, is no longer necessary to maintain a consistently cool temperature and ideal humidity. All aging now occurs in the caves, primarily in French oak barrels.
