Medium ruby in colour, opening with aromas of red currant and fresh cherry, kirsch, delicate floral notes, fresh tobacco, woodsmoke and wet clay. On the palate, bright, juicy red fruits lead to wave of extract, fine tannins and toast to a long finish replaying, smoky, earthy red fruits. Pair now with rare grilled red meat, hearty smoked bacon infused beef or game stews, and pasta with rich meat-based ragu. Cellar 3-8 years for more complexity.

Bill and Marilyn Redelmeier, seasoned agriculturalists in Ontario, have a deep-rooted connection to the local food scene. Initially, they ran Southbrook Farms as a bustling on-site market and a spot where you could pick your own produce in Richmond Hill, ON. Their journey took a vinous turn in 1991 when they ventured into the realm of winemaking, setting up a small-scale winery. To craft their premium VQA wines, they carefully selected grapes from vineyards in Niagara.
In 2005, with guidance from Ann Sperling, now the Director of Winemaking and Viticulture, the Redelmeier family seized the opportunity to acquire a prime 74-acre plot nestled in the Four Mile Creek sub-appellation of Niagara-on-the-Lake. Later, they expanded their domain by adding another 75 acres from a neighbouring property. This expansion allowed them to create pastures and barns for their resident flock of sheep. In 2008, the doors to their LEED-Gold, award-winning hospitality pavilion swung open, marking Southbrook Vineyards as Canada’s inaugural winery certified both organic and biodynamic.
Throughout their stewardship, Southbrook has steadfastly eschewed chemical pesticides and synthetic fertilizers, opting instead for a more holistic approach. Embracing biodynamic practices, they view the vineyard as an integral part of a self-sustaining ecosystem. Soil fertility is maintained through solar-powered means, with grazers like sheep converting pasture into vital nutrients. This commitment has transformed the property into a haven for biodiversity, teeming with wildlife, pollinators, and ingredients for biodynamic preparations. Coupled with the favourable conditions of the Four Mile Creek sub-appellation and clay-rich soils, Southbrook's careful cultivation yields distinctive wines, including Chardonnay, Semillon, and a range of red Bordeaux varieties like Cabernet Sauvignon, Cabernet Franc, Merlot, and Petit Verdot, along with Syrah.
