Very well balanced, it brings up herbal notes reminding freshly cut green grass, eucalyptus, tomato plant and artichoke. A silky and pleasant oil in mouth, with medium bitterness and spiciness, and fruity aromas of apple and wild herbs such as thyme and peppermint.
Pairing: Very much recommended for very elaborated dishes, ovenbaked fish and roasted meats. Ideal for soups, broths, pasta and casseroles.

Today, olive oil producers have earned their place in the national and international market. In the ancient city Toledo, Casa De Hualdo is situated on a hill above the Castilla-La-Mancha plains in central Spain. It is the best quality olive oil producer in the region with multiple awards.
Toledo city has a beautiful landscape. The Tagus river passes through this city, its southern side climbs from the meadows to the alluvial fan of piedmont deposits of the mountains. The farms of our olive groves are spread across this amazing geographical setting. Olives have been grown here for hundreds of years.
The climate is quite harsh, with very hot, dry summers and cold winters. This climate helps control the growth of pests and disease. The dry climate assists in attaining the desirable quality of the fruit by limiting vigorous growth of olive trees.
On the Casas De Hualdo farm crops coexist with natural wild fauna and flora. The diversified species in this natural area provides an enormous positive impact upon the olive groves.
