Cave Spring Vineyard’s Dolomite tier of wines is produced in limited quantities from the winery’s eponymous vineyard, perched high on the gentle slopes of the Niagara Escarpment’s Beamsville Bench. The line-up includes the ‘core four’ vinifera varieties that best suit Cave Spring Vineyard’s terroir, and that Cave Spring has focused on since its inception in 1986, including Riesling, Chardonnay, Pinot Noir and Cabernet Franc. A sparkling wine made entirely from Chardonnay rounds out the selection. Available exclusively through the winery, the Dolomite collection is a favorite of Ontario wine consumers and professionals as an authentic, high value expression of Niagara’s cool-climate terroir, with the wines frequently finding their way onto the lists of many of the provinces most innovative restaurants.
Tasting Notes:
3 x 2018 Riesling Dolomite
Aromas of yellow plum, pink grapefruit and anise lead the way, with hints of ginger spice and gun flint in behind. The palate is dry, medium bodied and rich in feel, with ripe citrus and stone fruit flavours underpinned by a firm, stony texture and elegant, well integrated seam of acidity. The finish is intense and mouthwatering, replete with white peach, nectarine, cantaloupe and a hint of spice.

3 x 2018 Chardonnay Dolomite
The nose is quite perfumed, with aromas of orange blossom, honeycomb, ginger and cinnamon at the fore and notes of Bosc pear, cantaloupe and flint in behind. Dry and medium bodied, the palate is succulent yet round up front, with a saline and mineral in the middle, with a firm, stony texture. This mineral core draws into a crisp, juicy finish of ripe blood orange along with notes of allspice and wet stone.

3 x 2018 Pinot Noir Dolomite
The nose is highly perfumed with lifted red berry and black cherry fruit alongside nuances of cedar and spice. The palate is medium bodied with a rounded, juicy attack followed by cranberry and red cherry flavours along with a distinct note of tea in the middle. Fine-grained tannins culminate at this point, tapering down on the finish alongside succulent Damson plum fruit and cedar-spice complexity.

3 x 2017 Cabernet Franc Dolomite
A dense, saturated nose of macerating blackberry, cassis and plum, with notes of blacktop, crushed stone and mint in behind. The palate displays a core of succulent yet brooding, dark berry fruit that melds with firm, fine-grained tannins toward the middle. A seam of red currant fruit brightens the wine, carrying into a powerful yet refined finish with notes of tar, cracked pepper and mineral.

For Cave Spring Vineyard, the compounding effect of four decades of carefully considered decisions has earned the winery the reputation of a proud pioneer, brave enough to try new things, and patient enough to await the rewards revealed with every passing vintage.Their evolution was guided by the selection of the cool-climate varieties to the rigorous commitment to sustainability, the utilization of exclusively indigenous yeasts and neutral oak in the cellars, and the constant crusade for more demanding industry standards.
Recalling the joy his father and son had found tapping into their rural Italian roots to revive a small vineyard in the 1960s, John Pennachetti Sr knew that the original abandoned orchard set against the Niagara Escarpment’s limestone cliffs had the potential to be something so much more for his family. Today, more than four decades after John and his sons took a chance and planted some of Niagara’s first Riesling and Chardonnay vines on that plot of land, Cave Spring Vineyard serves as a constant reminder of the good things that can happen when the past is honoured in forging a new future.
