Made for my wife and my muse, Solène. One of her wishes for our portfolio, is to feature a wine that tastes great from the moment it is bottled. It greets you smoothly, with silky, chalky tannins and an elegant mineral finish, promising to age nicely. The Cabernet Sauvignon showcased from our estate and Brecon Estates, with the Syrah and Grenache farmed from Lara’s Vineyard and Niner Estate. Prior to blending, the Cabernet Sauvignon was fermented in concrete tanks, then aged in 30% new French oak for 16 months in a mix of 225L and 400L barrels. Optimum cellaring can be 8 to 10 years. If opening it young decant this wine about 4 to 5 hours, served at 58°F to 60°F.
