From the mountains of Northern Greece in a plantation area funded and protected by the European Union, this location has the biggest variety in all Europe. Fresh Black Summer Truffles (Tuber Aestivum) is also known as “Scorzone”. The Black Summer truffles fruiting body has a rough alligator skin-like surface covered with small diamond-shaped projections, molded by stones surrounding it in the soil. When mature, the Black Summer truffle is near black on the surface with a pale grey flesh and white marbling that does not change color when exposed to air. It has a rich woodsy aroma with flavors of garlic, wild mushroom and earthy hazelnut undertones.
Fresh Black Summer Truffles season runs through MAY, JUNE, JULY, AUG.
Black truffles by weight can vary. Truffles naturally come in all sizes, this the reason why sizes are on average bases. Sometimes you end up with a bigger Truffle than you expected!
Store in the refrigerator, wrapped in a paper towel (change the paper tower daily or as needed) and in an airtight container. Also some people like to store it in a container filled with rice, you can use the rice to cook a delicious risotto afterwards.
