"This is a very attractive gewürztraminer, listed as off-dry but really quite dry to my palate. It displays very good weight and texture, with good structure and balance. Winemaker Angelo Pavan is forthright about his approach to this variety: “The acidity drops quickly in gewürztraminer, and a lot of people pick early to get the acidity. But I prefer to pick it later, to make sure the fruit is ripe. Gewürztraminer isn’t about acidity; you want this oily texture. If you want acidity, drink riesling.” This example clearly embodies his approach. It shows the classic flavour profile, some viscosity in the texture, and the characteristic slight bitterness toward the back palate. And the acidity? This is not a fat, low-acid gewürztraminer, any more than it’s the blowsy style. The acidity is here in ample degree, well balanced with the fruit, and adding freshness to the other qualities of this well-made wine."

For Cave Spring Vineyard, the compounding effect of four decades of carefully considered decisions has earned the winery the reputation of a proud pioneer, brave enough to try new things, and patient enough to await the rewards revealed with every passing vintage.Their evolution was guided by the selection of the cool-climate varieties to the rigorous commitment to sustainability, the utilization of exclusively indigenous yeasts and neutral oak in the cellars, and the constant crusade for more demanding industry standards.
Recalling the joy his father and son had found tapping into their rural Italian roots to revive a small vineyard in the 1960s, John Pennachetti Sr knew that the original abandoned orchard set against the Niagara Escarpment’s limestone cliffs had the potential to be something so much more for his family. Today, more than four decades after John and his sons took a chance and planted some of Niagara’s first Riesling and Chardonnay vines on that plot of land, Cave Spring Vineyard serves as a constant reminder of the good things that can happen when the past is honoured in forging a new future.
