As I begin to launch our Iconic wine dinners this spring, I knew I had to start with something special, and pairing the wines of Domaine Henri Magnien with the food and service from Opus, which I can assure you is one of the greatest restaurants in Toronto, with the greatest wine cellar was an absolute no brainer. Having tasted the wine, and knowing the space, I can assure you this will go down as one of the greatest wine dinners we do this year. Due to how little wine is available, and to make sure we execute at the highest level possible I am releasing just a handful of seats. I will walk you through wines that made my jaw drop at every turn this year, and what so far is the greatest tasting I have had all year.
Domaine Henri Magnien is one of the brightest young stars of not just Gevrey, but of the entire Cote de Nuits. The domaine owns some prime sites in the north west of Gevrey, in an area called the Cote St Jacques, including holdings in Lavaux, Champeaux and also a great strip running the length of Cazetiers, known as the “Le Petit Chambertin” because it has the same combination of soil types. These wines are soul touching to say the least, and importantly will show well throughout their long lives. No longer can we call him a rising star, as his wines from top to bottom were transparent, pure, and totally enthralling while maintaining the soul of Gevrey Chambertin. He has fully mastered his terroir, and his craft.
I could write an essay on what an incredible restaurant, and what incredible people Tony and Mario Amaro are. They are true restauranteurs, true hospitality professionals, something that is sadly disappearing. Their partnership with Chef Jason Cox, hidden just outside Yorkville is my favourite restaurant in Toronto. The food is sensational, but importantly to me is not overcomplicated, there is no foam, no smoke and mirrors, no what you will eat at Opus is all about great ingredients, done simply, and that to me is great food. Tony has over 30 years built one of the greatest wine cellars in Canada, and his knowledge of Burgundy is unmatched by any Sommelier in Toronto. He has three decades not just of opening, but drinking the wines, and the trust some of the greatest collectors and enthusiasts have to trust him, and buy what he buys is something that I aspire to build on a daily basis. To partner with him, Mario and Chef Jason on this is something I’ve been begging to plan for years, so please join me in what I know will not just be one of the best dinners I do all year, but one of the most fun!
