Hildegard is a stellar blend that offers texture, and length from the Pinot Gris, richness and mid-palate from the Pinot Blanc, and finishing acidity & minerality from the homeopathic inclusion of Aligoté. Each varietal adds their own fruit characteristics. The 2000 Hildegard possesses aromas of pear, violet, marzipan, coconut, lavender, licorice and a trace of butterscotch from age. Its flavor profile follows suit exactly with excellent integration.
