“Delicious Chardonnay from Jura, in an oxidative style: aromas of bruised apple, nuts, maple syrup and butter pear. The mouth is marked by the same flavours, carried by a fresh acidity, with notes of dried fruits and buckwheat honey. To try with an open mind if you’re not familiar with the style, but so cool. "The whites tend to spend one winter in topped up foudres and a second one in barriques that are not refilled. The current 2014 L'Etoile is the basic white produced exclusively with Chardonnay and is from a cooler year, which seemed to have a lighter effect of the veil of yeasts, built around freshness and minerality rather than volume. It has settled down already and has good complexity. Long and fresh. I'm sure this is going to be long lived in bottle."
