"It might seem a bit surprising that Bollinger skipped the great vintage of 2006 for the more modest 2007. For me that choice is however quite logical since the Bollinger house style is much better suited to austere vintages than for fruit bombs. Here we have a classic and perfectly balanced Bollinger with deep layers and beautiful crisp apple acidity. Gorgeous balance between the dark and light as a perfect Ying and Yang marriage. Layers of dry cocoa, hazelnut fudge, dried apricots and juicy red apples dominate over a beautiful hint of forest aromas based on sous bois and mushrooms in the background. One of the three best champagnes from this vintage."

Bollinger

Bollinger has roots in the Champagne region dating back to 1585. In 1918, Jacques Bollinger took over the company and expanded the facilities by building new cellars, purchasing the Tauxières vineyards, and acquiring the assets of another Champagne maison.

In 1941, production was expanded through the purchase of more vineyards. Owner Lily Bollinger is well remembered for her famous quote about drinking champagne, ‘I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it—unless I’m thirsty.’

In 1971, Lily Bollinger was succeeded by her nephews Claude d'Hautefeuille and Christian Bizot. They acquired additional vineyards and developed the brand internationally. In 2021, Bollinger finalized a purchase of Willamette Valley's Ponzi Family Winery in Oregon Wine Country, on the West Coast of the United States. The region has been known to grow some of the best Pinot Noir wine grapes in the world, and this purchase marks another esteemed French producer becoming more involved in American West Coast wine production.

The winemaker has also used the James Bond film series as a marketing device for several decades, beginning in 1973 in the film Live and Let Die and more recently in the Daniel Craig series, including the films Casino Royale and Skyfall. And as of 2020, for the Craig movie No Time To Die, a 40 year anniversary beverage was released, the Special Cuvée 007 Limited Edition
