The 2005 Reserva has a powerful bouquet of violets, molasses, dried cherries, baked earth, and kirsch. On the palate the wine is equally powerful, with flavors of plum, raisins, allspice, flint, cedar, and pencil lead. The tannins come partly from barrel and partly from the fruit, but they are well integrated and make this a great pairing for a big grilled ribeye.

Rotllan Torra Winery, established in 1982, predates the rise of the ‘new Priorats,’ wines that gained popularity thanks to critic Robert Parker. Originally wine distributors in Penedès, the Rotllan family relocated to Priorat after discovering the region's exceptional potential. At the time, the winery was the sixth in Priorat and among the pioneers to exclusively bottle its entire production.
Aside from the wine tasting experience, Rotllan Torra's main allure lies in the history and architecture of its facility. Constructed in the mid-17th century by the Carthusian monks of Scala Dei, the building exhibits Renaissance style with Cistercian influences. Originally designed as a cellar, it has a substantial capacity of one million liters of wine. The construction, utilizing stone and mortar and dug into the ground, provides ideal winemaking conditions—constant temperature and humidity, along with silence and darkness.
In the 20th century, after changing ownership, the cellar was modernized with the latest technology of that era, including electricity and glazed ceramic. Towards the end of the century, Rotllan Torra embraced contemporary trends, incorporating stainless steel and wood into the facility. Notably, there is an intriguing bottle cellar for 100,000 bottles in the old underground cellars, now perforated and interconnected.
Additionally, the cellar accommodates the facilities of the Torroja cooperative, serving as a warehouse. Rotllan Torra utilizes fruit from its 86 acres of vineyards in the Torroja township, featuring varieties such as Garnacha Tinta and Cariñena (between ten and one hundred years old), as well as Cabernet Sauvignon, Syrah, and Merlot. The winery produces approximately 200,000 bottles annually, with 80% of the output destined for export.
