Mas Cal Demoura
Established in the early 1990s, Mas Cal Demoura stands as a pioneering estate that played a vital role in enhancing the quality of Languedoc wines. Since 2004, Isabelle & Vincent Goumard have dedicated their efforts to showcasing the remarkable terroirs around Jonquières in the heart of Terrasses du Larzac, introducing these magnificent landscapes to the global wine community.
Situated in Jonquières, roughly thirty kilometers northwest of Montpellier, amidst the Terrasses du Larzac, the estate benefits from a generous Mediterranean climate, complemented by the fresh air from neighbouring Larzac. This balance ensures the preservation of freshness and acidity, with day-night temperature variations during maturation contributing to a rich aromatic profile.
Cultivating eleven grape varieties, the goal is to identify the most suitable grape variety for each plot, emphasizing the terroir's identity in a quest for harmony and balanced wines. The estate covers 16 hectares of limestone and clay-limestone terroirs, providing depth and energy to the wines, with naturally low yields (15 to 25 hl/ha).
Beyond organic practices, the estate has gradually adopted a biodynamic approach to enhance biodiversity, soil life, and the vine's natural defences. Tailored to each plot's specificities, practices include superficial plowing, organic amendments, controlled grass cover, and green work (such as disbudding and meticulous leaf removal). Biodynamic preparations, like horn dung, silica, herbal teas, and plant decoctions, are utilized, along with efforts to create habitats for auxiliary fauna, such as planting hedges and installing nesting boxes for bats. Harvesting is conducted manually, with grapes sorted in the vineyard and then on a sorting table in the cellar.
