Pinot Noir from his close-planted vineyard is (obviously, it’s Timo) 100% whole bunch fermented with just a small portion in new oak. Raspberry ripple alongside savoury dried herbs, gentle acidity and a hug-like bit of texture. Really see his winemaking in full flight here. German born but Yarra stalwart Timo Mayer is the crazy king of carbonic maceration! Anyone who has met this person knows the kind of joyful madness that can ensue after drinking these wonderful wines. Even if you haven’t, you’ll feel it in the energy of the wines for sure.
