Tasting Notes

Vidal is the most popular grape variety used to make Icewine. It’s been used to make several different styles of Icewine but we like it best straight forward and intense. When you first put your nose into the glass your head is filled with thoughts of honey, apricot and flower gardens in full bloom. It coats your mouth and you feel it well after you swallow. It’s definitely sweet but the balancing acidity is telling of the care that went into its making. Aged Vidal Icewine is an acquired taste so we like to recommend that you enjoy it while it still has the fresh floral notes – up to about five years old.

The Producer

Château Des Charmes

The impressive entrance to Château des Charmes Winery (pictured below) with the formal gardens and the classic façade are reminiscent of an ancient French estate. Hardly surprising, as Château des Charmes has a long history of winemaking, dating back seven generations to Alsace.

Founded by industry visionary Paul Bosc, this family estate winery is set among 35-hectares of pristine vines in the St. David’s Bench. By the early 1970s, Paul was crafting Ontario wines that surprised many in the wine world. In 1978, he established Château des Charmes as a 60-acre estate winery and planted the first commercial Canadian vineyard growing only vitis vinifera grapes….this is truly Canadian wine history in the making.
