Tasting Notes

This wine is a single-varietal Aligoté from vineyards with clay-limestone soils, cultivated organically. It is pressed directly and fermented spontaneously in barrels with native yeasts. Aged for 12 months in used 350L French oak barrels, then spends its second winter in stainless steel tanks on its lees. Unfined and unfiltered, with only minimal sulfur dioxide added at bottling.
