Tasting Notes

"Very ripe aromas of cassis, black berry liqueur, violet and anise precede the equally broad-shouldered flavors that also coat the palate with dry extract on the powerful, hugely long and very serious finish that is shaped by a markedly firm tannic spine. This is a buy and forget you own it wine as I would suggest not touching a bottle for at least 10 years. With that said, this is most impressive.”

The Producer

Nicolas Rossignol

Nicolas Rossignol is the fifth generation of wine growers in his family in Volnay and part of the dynamic generation who took on their family estates during the 1990s. Having started small with just 3 hectares, he has carefully built his domaine up to 17 hectares covering some of the most exceptional vineyards in Beaune, Pommard, Savigny Lès Beaune and Volnay. Nicolas’s winemaking is always adaptable, making the most of his modern winery on the outskirts of Beaune. He remains broad-minded on the question of destalking vs whole bunch vinification. He likes his wines to develop slowly in cask, to bring out greater aromatic complexity and contribute to strengthening a wine.
