    "This is a very attractive gewürztraminer, listed as off-dry but really quite dry to my palate. It displays very good weight and texture, with good structure and balance. Winemaker Angelo Pavan is forthright about his approach to this variety: “The acidity drops quickly in gewürztraminer, and a lot of people pick early to get the acidity. But I prefer to pick it later, to make sure the fruit is ripe. Gewürztraminer isn’t about acidity; you want this oily texture. If you want acidity, drink riesling.” This example clearly embodies his approach. It shows the classic flavour profile, some viscosity in the texture, and the characteristic slight bitterness toward the back palate. And the acidity? This is not a fat, low-acid gewürztraminer, any more than it’s the blowsy style.     On the nose, classic Bartlett pear and lemon meringue aromas emerge overtop notes of candied orange peel,golden raisins and allspice. The palate is sweet and full in body yet not cloying, echoing in flavour the aromas of the nose along with notes of black tea, honeycomb and brown sugar. Crisply structured throughout, the wine's brilliant acidity provides a clean, elegant finish reminiscent of orange marmelade and crème brûlée. A vibrantly aromatic wine, with notes of petrol, marmalade, citrus and flowers. It's rich and honeyed, with a lightly smoky, lingering finish.

    Cave Spring`s Blanc de Blancs is made entirely from Chardonnay grapes, which are grown in the limestone-clay soils of their vineyards along the benchlands of the Niagara Escarpment. Vinified in the Traditional Method, it was fermented and aged sur lie in bottle for a minimum of 30 months prior to disgorging. The result is a dry, Brut-style sparkling wine exhibiting delicate effervescence mineral nuances that are true to its cool-climate origins. WINE ACCESS: This wine is the flagship for Cave Spring's increasingly important sparkling wine focus, which now involves four labels. It won a Lieutenant-Governor's Award in 2012. This 100% chardonnay was aged for three years, building subtle almond complexity into the dried apple, lemon and shortbread aromas. It is light-bodied, lively, gentle, delicate and a touch sweet, yet built on a beam of mineral acidity. There's excellent length on the finish. This is a terrific blanc de blanc. 91 points.     "That flesh, that Kabinett flesh, fills the CSV in every crevice. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only '13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions. A lingering ascension hovers as it rises, until it slowly fades into the welkin, like a balloon that languidly gets lost into the blinding blue of a midday sky. Drink 2017-2025."
