  1. $94.50

    Cave Spring Cellars

Canada (Canada), Niagara (Canada), Ontario (Canada)

    6 x 750 ml

    Rich Fish, Vegetables, White Meat

"This tart and delicate wine packs a lot of flavor in its dry frame. Grapefruit and nectarine are the dominant fruit flavors. It’s sappy and long, with a faint hint of petrol."

    Cave Spring Cellars

Canada (Canada), Niagara (Canada), Ontario (Canada)

    6 x 750 ml

Borscht Cabbage Soup, Olivier Salad, Pasta, Vegetables, White Meat

"And now for something completely different—a clone of Chardonnay known for its heady, perfume-like aromas. This opens with room-filling aromas of orange blossom, fresh-grape nuances and a distinctive musk-like perfume. A surge of viscous, slightly off-dry ambrosia coats the palate with white nectarine and tropical fruit interwoven with Meyer lemon and notions of peach skin. It’s mid-full weight with generous mouth feel and a lingering balanced aftertaste with just enough acidity to keep it crisp and refreshing. Another triumph for Cave Spring Cellars and winemaker extraordinaire, Angelo Pavan. Sip on its own or pair with grilled or pan-seared seafood."

    Cave Spring Cellars

Canada (Canada), Niagara (Canada), Ontario (Canada)

    6 x 750 ml

Ham, Lard, Pasta, Pelmeni Dumplings, Suckling Pig, Vegetables, White Meat

"Sourced from the estate’s oldest vines, this mineral-drenched, bone-dry wine fills the palate with texture and deep flavors. Rather than flesh, the emphasis is on skin phenolics—grapefruit pith and peel in particular. There’s a sense of light oiliness, not at all unpleasant, and a graceful, lingering finish."

  4. $49.70

    Cave Spring Cellars

Canada (Canada), Niagara (Canada), Ontario (Canada)

    2 x 375 ml

    Breads, Sweets, White Meat

Solidly in the dessert wine camp in this vintage, this checks in at 102 g/L residual sugar. Peach, apricot and ripe nectarine fruit flavors abound, with a drip of honey. It's juicy and big, but never cloying, and finishes with a suggestion of dry straw.

"Produced from the estate's oldest vines, this is a worthy reserve. This wine shows impressive depth and intensity, with powerful fruit flavors led by Satsuma orange and Meyer lemon. There's a touch of spice and an underlying minerality. A sensational value."

    6 x 750 ml

Breads, Cured Meat, Rich Fish, Soft Cheese, White Meat

"This wine is the flagship for Cave Spring's increasingly important sparkling wine focus, which now involves four labels. It won a Lieutenant-Governor's Award in 2012. This 100% chardonnay was aged for three years, building subtle almond complexity into the dried apple, lemon and shortbread aromas. It is light-bodied, lively, gentle, delicate and a touch sweet, yet built on a beam of mineral acidity. There's excellent length on the finish. This is a terrific blanc de blanc."
