    "Twisted is the flagship white of a laudible, high-end Niagara winery, unlike many of its peers in this country and beyond, has kept a sane lid on prices. The wine is a blend of Riesling, Gewurztraminer and Chardonnay, and this is the first vintage under the eye of winemaker Dave Sheppard. 
    Perfectly off-dry, intriguingly oily and for the sake of a foreign frame of reference - voluptuously Alsatian. Plump and musky, it offers up flavours of apricot, peach and baked apple, like a mixed-fruit country pie. A well-crafted blend that combines Riesling’s zip with Gewurztraminer’s aromatics and Chardonnay’s flesh."

    Darker berries define the Paul Pender take on Gamay for Niagara and in '13 there is a level of tension and girth not yet approached. This third Tawse Gamay is overt in attitude, connotative of Beaujolais Cru staging, an ovule of rebellion and a disposition just as though in the grips of Asmodeus. The Tawse effect is entrenched in clay and possessive of knowledge as if derived by an invitation only junket to the Gamay motherland. If the stance seems serious, the fruit is up to the task.     Spectacular value on this double 90 point, back vintage Niagara wine.  Properly treated, high quality fruit leads this elegant, light sytle of Chardonnay.  Aromas of baked apple and honeyed melon finish with slight spice and toasty oak. 

    "Masterfully made: great value too. A well-rounded, balanced Niagara Chardonnay: not heavy or wimpy, just right. Toasted almond and golden apple aromas. Nice mouth-feel.     "The 2016 Chardonnay Estate is a blend of grapes form three vineyards parcels at Cave Spring Vineyards, ranging from 32 to 38 years of age. This is a ripe yet dialed-in expression of Chardonnay, which shows the warmth of the vintage but doesn't lose its brightness or purity. Thoughtful management in the cellar called for 50/50 blend of tank and barrel fermented lots, with 20 percent new French oak and an 80/20 mix of selected and indigenous yeast strains. It calls to mind some of the more showy Cave Spring vintages from the past - 2003, 2007 and 2010 - but with more harmony and lengths. Drink now to 2024."

    "Spark is a traditional method riesling from organically grown grapes high on the Escarpment in Twenty Mile Bench. There is light toast on the nose along with typical riesling green apple and lemon. It's light bodied (11.5%) with taut, racy, mouthwatering acidity rounded just a bit by a hint of sweetness. Energetic mousse adds to the cleansing and scouring effect, and it ends with a mineral note. The length is excellent. Don't over-chill, and brace yourself. Very good value."
