    "Tawse is proud to partner with Canadian music icon and Order of Canada recipient Jim Cuddy to introduce “Cuddy by Tawse” Chardonnay. Jim collaborated with winemakers Paul Pender and Rene Van Ede to create this premium barrel-fermented blend. Aged 12 months in French oak, this wine displays aromas of Bosc pear, baking spice, white flower and hints of wet stone minerality. Crips notes of grapefruit are accompanied by apple and pear and a touch
    of shy oak, resulting in a beautiful mouth feel on the palate.

    Cave Spring`s Blanc de Blancs is made entirely from Chardonnay grapes, which are grown in the limestone-clay soils of their vineyards along the benchlands of the Niagara Escarpment. Vinified in the Traditional Method, it was fermented and aged sur lie in bottle for a minimum of 30 months prior to disgorging. The result is a dry, Brut-style sparkling wine exhibiting delicate effervescence mineral nuances that are true to its cool-climate origins. WINE ACCESS: This wine is the flagship for Cave Spring's increasingly important sparkling wine focus, which now involves four labels. It won a Lieutenant-Governor's Award in 2012. This 100% chardonnay was aged for three years, building subtle almond complexity into the dried apple, lemon and shortbread aromas. It is light-bodied, lively, gentle, delicate and a touch sweet, yet built on a beam of mineral acidity. There's excellent length on the finish. This is a terrific blanc de blanc. 91 points.     "That flesh, that Kabinett flesh, fills the CSV in every crevice. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only '13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions. A lingering ascension hovers as it rises, until it slowly fades into the welkin, like a balloon that languidly gets lost into the blinding blue of a midday sky. Drink 2017-2025."
