    Produced using the Tradtional Method of sparkling wine production, and aged for at least 15 months on lees, making this a Reserva Cava. Brilliant yellow colour with green reflections. Fine, persistent bubbles forming continuous beads. On the nose, it displays citrusy and tropical fruit notes along with more complex aging aromas (toast & brioche) that enrich the range of aromas. On the palate, it is creamy, wide and long-lasting. The result is a highly versatile wine, pairable with a great variety of food.

    "Very elegant on the nose, there is just some brioche, almondine and grilled pineapple. The palate has a greater concentration of flavor, its lively bubbles driving roasted apple, buttered biscuit and underripe red plum. The long finish is pleasing."

    "I loved the wild character of the young, unoaked 2017 Señorío de P. Peciña Cosecha, mostly Tempranillo with some 3% Garnacha and 2% Graciano fermented in stainless steel with indigenous yeasts. It had a light maceration and extraction and was kept in tank for two months before bottling. It has a raw and savage nose, mixing raspberry leaf and earthy aromas, full of character with elegant rusticity. It's juicy and chewy, as pure as it gets. I'd love to see this wine in a couple of years. 60,000 bottles produced. It was bottled in December 2017."

    "The 2017 Thalassitis is an unoaked Assyrtiko coming in at 13% alcohol. This is a bottling I usually prize for its freshness, elegance and lively demeanor. This year, one in which the wines could have a lot of concentration if you could avoid heat spikes, it has all of those things still, but it seems to lean to a deeper style instead of an exhilarating one. Overall, it finishes with a big hit of fruit, nicely supported by its acidity. On the first day tasted, it was a bit stolid. The next day, it reminded me of Thalassitis again—big acidity slicing and dicing that fruit, even in a year when it seems very dense and ripe. The score went up notably. The gripping and tense finish, by the way, seems endless. This does lack its usual finesse, so we'll see where it goes when it unfolds. This does have some things to prove in the cellar. In the new Santorini Assyrtiko trend, it is no longer acceptable to make wines that just drink well for five years, at least not if you want to be at the top of your game. It mostly seems pretty super, and it is worth leaning up right now."
