    Château Des Charmes

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Cured Meat, Duck breast, Red Meat, Roasted Vegetables, Salted or Marinated Mushrooms, Veal roasted

This flagship red wine, Equuleus is a classically styled blend of 50% Cabernet Sauvignon, 25% Cabernet Franc and 25% Merlot. But Château des Charmes don’t make it every year. To be considered an “Equuleus year” each of the three grape varieties must have achieved at least 23.5º Brix at harvest. The 2012 vintage was awarded the Ontario Wine Awards “Red Wine of the Year” in 2017. Aged for 16 months in 1/3 new French oak, 2/3 in non-new French oak then the blend rests in French oak casks for several months. The result is rich and complex with flavours of cassis and dark chocolate. Equuleus is ready to drink now, but will continue to develop in the bottle for at least another 5-10 years.

    Redstone Winery

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Cured Meat, Hard Cheese, Red Meat

The fruit for this Cabernet Franc is sourced exclusively from the Redstone Estate vineyard. Planted in 2010 this is the seventh growth and fourth har- vest from this high-density, low-yielding 6 acre block. The nose is ripe with red currants, plums and cherry cola. Savoury hints of earthy beets and fresh sage follow with allusions to graphite and dusty gravel . Tannins are firm and give balance to the warming alcohol.

    Redstone Winery

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Cured Meat, Hard Cheese, Red Meat, Vegetables

Named for its heavy red clay soil and large stones, the organically and biodynamically farmed Redstone Estate Vineyard is perfect for late- ripening varietals like Syrah. This wine was hand-harvested at the peak of ripeness and aged for 18 months in French oak barrels, 50% new. Beautifully coloured, this wine has an expressive nose of cured meats, dried herbs and black currants and a hint of white pepper. Herbaceous on the palate with almost hop-like flavours and fleshy fruits (plums and late-season cherries), it is incredibly approachable with well-rounded tannins, lively aidity; a perfectly structured wine.

    Flat Rock Cellars

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Cured Meat, Hard Cheese, Red Meat, Roasted Vegetables, White Meat

Flat Rock Cellars' Gravity is designed to showcase the "best of the best" in the estate's Twenty Mile Bench vineyard and cellar. That means careful selection of the best parcels of Pinot Noir vines, vinified separately and then the best is chosen from individual barrels. The nose shows generous cran-cherry fruit with a subtle note of earthy goodness and oak spice. It's pure and delicious on the palate with bright red fruits, ripe tannins, vibrant acidity and good length through the finish.

"Truly benchmark Niagara Pinot Noir! I've long been a fan of Flat Rock's Pinot Noirs, especially the Gravity. Aromas of ripe cherry. Vibrant racy acidity. The winery uses the gentlest methods to press the grapes and make the wine via a gravity flow system rather than pumping (thus the name gravity on the label). Then the wine was aged in French oak barrels for 18 months. Medium ruby hue with cherry accents, polished tannins, silky smooth texture and medium bodied weight. Gorgeous cherry-berry aromas and flavours on the mid-palate. Then it finishes with wisps of black raspberry and vanilla toast. This red wine is so vivacious and so fantastically great year after year. Pair with roast or grilled chicken."

    Tawse Winery

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Breads, Cured Meat, Red Meat, Roasted Vegetables

Here's a compelling, varietally accurate Cabernet Franc from Tawse, that shows the true character of Niagara Cabernet Franc. We love the edge of green herbs, that hint of green pepper, and the vibrant core of raspberry, blackberry and black currant fruit, all backed by a cedary, twiggy undertone. The palate carries the fruit and herbs with bright acidity and very fine but persistent tannins, that linger with the fruit on the cedary finish. Firm, elegant and full of life.

Henry of Pelham Cuvee Catharine has long been the pinnacle achievement by which all Ontario sparkling wines are measured against - it's also the sparkler other wineries aspire to create when they start up their own Sparkling program. Year-in and year-out Henry of Pelham makes this bubbly and every year they get raves for it ... and why not, fine long lasting bubbles, great taste, clean finish - what more could you ask for. A more detailed description would include a nose of lemon, lime and pear along with a touch of mineral and stone fruit. The taste is dry and toasty with apple and citrus flavours and plenty of buzz on the tongue from those bubbles. Like your sparklers with a little more sweetness?
