    On the nose, scents of white flowers, wet stone, and cantaloupe emerge over top hints of black licorice and fresh herbs. The palate is medium dry with concentrated pink grapefruit and mandarin orange on the attack, giving way to yellow cherry fruit on the mid-palate. The finish is very persistent, with notes of crushed stone, spice and citrus zest. The long, cool ripening of this vintage has delivered remarkable flavour complexity and a seamless integration of body and acidity on the palate.

    This wine is burgundy in colour with garnet hues to the edge. On the nose, spicy notes of cloves and cinnamon along with penetrating red berry fruit are at the forefront, with earthy undertones in behind. The palate combines bright raspberry and Bing cherry fruit, crisp but well-integrated acidity and great intensity and persistence of flavour throughout. There is a definite gaminess and a hint of white pepper that lingers very long on the finish.     "This is a very attractive gewürztraminer, listed as off-dry but really quite dry to my palate. It displays very good weight and texture, with good structure and balance. Winemaker Angelo Pavan is forthright about his approach to this variety: “The acidity drops quickly in gewürztraminer, and a lot of people pick early to get the acidity. But I prefer to pick it later, to make sure the fruit is ripe. Gewürztraminer isn’t about acidity; you want this oily texture. If you want acidity, drink riesling.” This example clearly embodies his approach. It shows the classic flavour profile, some viscosity in the texture, and the characteristic slight bitterness toward the back palate. And the acidity? This is not a fat, low-acid gewürztraminer, any more than it’s the blowsy style.     "That flesh, that Kabinett flesh, fills the CSV in every crevice. In 2013 the residual sugar number lies between 15 and 16 g/L, and though the crop was bigger, it was still picked later than in 2012. The result is formidable corporeal concentration, consistency of house style and perhaps the only '13 Niagara Riesling to imitate, perpetuate and extrapolate on the vintage that came before. This Cave Spring concentrates fruit and Escarpment into a powerful Riesling, streaming like charged particles through changing expressions. A lingering ascension hovers as it rises, until it slowly fades into the welkin, like a balloon that languidly gets lost into the blinding blue of a midday sky. Drink 2017-2025."

    Cave Spring`s Blanc de Blancs is made entirely from Chardonnay grapes, which are grown in the limestone-clay soils of their vineyards along the benchlands of the Niagara Escarpment. Vinified in the Traditional Method, it was fermented and aged sur lie in bottle for a minimum of 30 months prior to disgorging. The result is a dry, Brut-style sparkling wine exhibiting delicate effervescence mineral nuances that are true to its cool-climate origins. WINE ACCESS: This wine is the flagship for Cave Spring's increasingly important sparkling wine focus, which now involves four labels. It won a Lieutenant-Governor's Award in 2012. This 100% chardonnay was aged for three years, building subtle almond complexity into the dried apple, lemon and shortbread aromas.
