    Maetierra

    Rioja (Spain), Spain (Spain)

    12 x 750 ml

Breads, Cured Meat, Duck breast, Hard Cheese, Red Meat, Veal roasted

Produced at Maetierra, a winery owned by Vintae, this is a project based on four vineyards: Two are old-vine tempranillo dating to the 1920s and ’50s; one is garnacha planted in the 1920s; the fourth is graciano planted in the 1980s. They come together in a pretty red, a tight, silken mouthful of wine. This has the ripeness of cherries in syrup, but it’s savory and austere. There’s a lot of American oak in the aroma, needing air to relent and reveal the lush, warm, rich sweetness of fruit, even as the tannins continue to keep it dry. A juicy Rioja for steak.

    Château de Gaudou

    Cahors (France), France (France)

    6 x 750 ml

Breads, Duck breast, Ham, Hard Cheese, Red Meat, Vegetables

"Fermented and aged in an oval-shaped tank, this wine is very young, packed with black fruits and still dominated by tannins. A dense expression of Malbec from old vines, it has a spicy character."

    Château Des Charmes

Canada (Canada), Niagara (Canada), Ontario (Canada)

    1 x 750 ml

Cured Meat, Duck breast, Red Meat, Roasted Vegetables, Salted or Marinated Mushrooms, Veal roasted

This flagship red wine, Equuleus is a classically styled blend of 50% Cabernet Sauvignon, 25% Cabernet Franc and 25% Merlot. But Château des Charmes don’t make it every year. To be considered an “Equuleus year” each of the three grape varieties must have achieved at least 23.5º Brix at harvest. The 2012 vintage was awarded the Ontario Wine Awards “Red Wine of the Year” in 2017. Aged for 16 months in 1/3 new French oak, 2/3 in non-new French oak then the blend rests in French oak casks for several months. The result is rich and complex with flavours of cassis and dark chocolate. Equuleus is ready to drink now, but will continue to develop in the bottle for at least another 5-10 years.

    Bodega Classica

    Rioja (Spain), Spain (Spain)

    6 x 750 ml

Duck breast, Pasta, Red Meat, Roasted Vegetables

"Lovely classic nose of sweet blackcurrant, blackberry and cherry fruit with some spice and vanilla notes. There’s also some leather and sweet damson, too. The palate is sweet and concentrated with lovely intensity, still quite a bit of fruit, and some first signs of maturity: undergrowth, prunes, herbs and leather. Very fine."

    Caymus Vineyards

California (USA), Suisun Valley (USA), USA (USA)

    12 x 750 ml

Breads, Duck breast, Hard Cheese, Red Meat, Suckling Pig, Veal roasted, Vegetables

Suisun (su-soon) Valley, which lies to the Southeast of Caymus, is only a 40-minute drive and is similar to Napa Valley 40 years ago. With its warm days and cool nights, the region is known for delicious stone fruits and walnuts – increasingly, it is also gaining recognition for its wine. Durif is synonymous with Petite Sirah, the widely grown grape in the region – Chuck added “Grand” to the name of Suisun-grown Durif because he doesn’t do “petit”. With lush textural tannins, this wine is rich, supple and totally enjoyable.

A velvety purple with ruby-red highlights, the 2017 vintage of Grand Durif features an abundant one of dark plums and baked blueberries, woven with scents of lavender, white rose petals, sweet smoke and brown spice. Entry on the palate is smooth, yielding to a pop of high, luxurious tannins that then sneak back, revealing lush fruit flavors of dark berry cobbler. What gives this wine its singular character are the tannins - strong yet supple, pronounced while being strikingly soft. The finish is long, with warm, evocative notes of unsweetened cocoa. Still quite young, this vintage can be enjoyed now and also has tremendous aging potential.

    Moët & Chandon

    Champagne (France), France (France)

    1 x 750 ml

Breads, Caviar, Cocktail, Duck breast, Foie gras, Sweets, Vegetables, White Meat

"Dark, vivid pink. Ripe red berries, rose oil and tangerine on the nose, plus a subtle note of toasty lees. Bitter cherry and berry skin flavors give way to softer raspberry in the middle, with a tangy blood orange nuance adding cut and lift. Packs a punch but shows very good clarity and delineation, finishing round, smooth and quite long."
