    Very pretty, candied strawberry and raspberry, high-toned violets on the nose. This is an excellent example; one of the best red Icewines I've come across, without the concentrated bell pepper essence that often characterizes Icewines made as a last resort when fruit didn't ripen sufficiently to make table wine. Long finish. Well balanced. Superb. Harvested during the night at temperatures between -10° and -12°C. Juice from the frozen berries was slowly removed using a traditional wooden basket press to extract the most color possible, then settled in stainless steel tanks. The juice was fermented at cool temperatures using selected yeast to retain volatile aromatics. After a short aging period in stainless steel, the wine was settled, filtered, and bottled by gravity.

    We pick our Icewine at -10°C or colder to make sure every ounce of water left in the grapes is completely frozen. We don’t want to dilute this incredible wine in any way. Once in the Harvest Room we press the frozen bunches of grapes at up to 100 psi just to extract a few trickles of the thick and sweet juice. Because the juice is so cold and sweet we have to use aggressive yeast to start and maintain fermentation, which can take several months. The wine is sweet but is finely balanced with fruit flavours and a strong backbone of acidity. Riesling is one of the great white grape varieties with excellent aging potential.     This pinot noir rosé is from 30 year old vines, fermented and rested for six months in tank and blended with 7 percent Coteaux Champensois prior to three years en tirage. The medium pink hued fizz is imbued with strawberry, wild cherry, raspberry brioche and red / pink florals that dart around the mouth buoyed by brisk acidity. There is a gentle padding on the palate, the result of three years on the lees. As with all of the Lelarge Pugeot wines, there is a riff of meringue that lingers on the finish.
