Pierre-Marie Chermette, a skilled fifth-generation cultivator, stands as a guardian of his familial legacy and the rich traditions inherent to his region. His unwavering commitment to these practices surpasses that of many others in the field. In the face of evolving trends, Pierre has steadfastly embraced the time-honoured techniques passed down through generations of his family. Throughout his entire life, he has remained dedicated exclusively to the classic methods ingrained in his family's heritage.

This dedication translates into a commitment to sustainable farming practices, utilizing only indigenous yeasts for every wine, conducting prolonged fermentations, and crafting whole-cluster (semi-carbonic) wines in the antique foudres established by his great-grandfather. Notably, Pierre Chermette's approach yields grapes of such natural ripeness that chaptalization is deemed unnecessary. The resulting wines, characterized by exceptionally low yields, undergo minimal filtration upon bottling, with the addition of little to no sulphur, depending on the specific cuvée.
