Established in 1910 by Henri Bouvier, the grandfather of Bernard, the René Bouvier estate, situated in Marsannay, experienced considerable expansion in the mid-1950s under the leadership of René Bouvier, Bernard's father. Through strategic acquisitions and leasing of vineyard plots, the estate grew to 12 hectares by 1991.

Taking control in 1992, Bernard continued the development of Domaine René Bouvier. Notably, in 1998, he acquired Marsannay Le Clos in Couchey, celebrated for its high-quality white wine.

Starting in 2000, Bernard Bouvier initiated collaborations with Premier Cru and Grand Cru wine producers. By 2001, the estate had adopted a new qualitative approach, implementing manual harvesting, sorting tables, gravity fermentation, and other advancements. In the same year, two hectares (around 5 acres) in Gevrey-Chambertin were acquired, featuring 90-year-old vines for the Racine du Temps cuvée.

A pivotal moment came in 2006 with the construction of a new winery in Gevrey-Chambertin, allowing experimentation with extended aging periods, demi-muids (600-litre barrels), and concrete egg-shaped tanks to enhance wine quality and purity.

Prioritizing meticulous soil management, the estate officially embraced 100% sustainable organic winemaking in 2009, certified from the 2013 vintage onward. Since 2016, the same working philosophy has been maintained, although lacking official certification.

In 2019, Bernard took over his brother Régis's vineyards in the Côte de Nuits, positioned between Morey-Saint-Denis and Marsannay-La-Côte. Biodiversity-friendly soil management has been a focal point for over two decades, emphasizing respect for microbial life, auxiliary fauna, and quality vine production through visual selection.
