    The 2006 Extra Brut Premier Cru Millésime Terre is pure, fine and intense on the nose, with sweet cherry flavors and a spicy-mineral background. Rich, round and elegant, this is a very fruity-elegant and balanced vintage Champagne with a (very discrete) touch of Jura/Jerez oxidation on the finish. You get nice finesse and elegance here. The finish is long, complex, pretty intense and salty. Fascinating. This is a blend of 30% Chardonnay and 70% Pinot Noir that was disgorged in July 2017 with a dosage of four grams per liter.

    Cabernet has acclimatized extremely well to the Niagara Peninsula so it is a good candidate to make into Icewine. We tend these blocks of Cabernet like the others carefully managing the yields and of course keeping the bunches clean by removing any berries at the first signs of breakdown. Then we wait. And in late January, when the temperature dropped to -13ºC we hand-harvested the bunches by the light of the moon.

    As the last drop of the opening pour fell from the bottle into my glass a heady note of fresh apple cider, buckwheat honey and Mandarin orange made my head snap around to gaze at the golden blush. The glass rested over 20 centimeters from my nose, still the wine jumped up and energetically reached out to grab my full attention. Wow. This wine will not be ignored, and really, why would you? On the palate the wine is pure elegance dancing seductively from sweet and savoury to “hit me again” pleasure.

    We pick our Icewine at -10°C or colder to make sure every ounce of water left in the grapes is completely frozen. We don’t want to dilute this incredible wine in any way. Once in the Harvest Room we press the frozen bunches of grapes at up to 100 psi just to extract a few trickles of the thick and sweet juice. Because the juice is so cold and sweet we have to use aggressive yeast to start and maintain fermentation, which can take several months. The wine is sweet but is finely balanced with fruit flavours and a strong backbone of acidity. Riesling is one of the great white grape varieties with excellent aging potential.     Vidal is the most common grape variety to make Icewine. It's been used to make several different styles of Icewine but we like it best simply, straight forward and intense. When you first put your nose into the glass your head is filled with thoughts of honey, apricot and flower gardens in full bloom. It coats your mouth and you feel it well after you swallow. It's definitely sweet but the balancing acidity is telling of the care that went into its making. Aged Vidal Icewine is an acquired taste so we like to recommend that you enjoy it while it still has the fresh floral notes - up to about 5 years old. > Learn More
