    Cabernet has acclimatized extremely well to the Niagara Peninsula so it is a good candidate to make into Icewine. We tend these blocks of Cabernet like the others carefully managing the yields and of course keeping the bunches clean by removing any berries at the first signs of breakdown. Then we wait. And in late January, when the temperature dropped to -13ºC we hand-harvested the bunches by the light of the moon.

    From a new family (relatively speaking) to Chablis, the estate belongs to Marie-Noëlle & Laurent Ternynck. The old vines Chablis saw 12 months in foudres, on the lees, with fruit gathered from vineyards in Fleys. The cool spot comes with a higher altitude, on a windswept plateau and so harvest is generally five to six days later. And so their Chablis is cool, direct, taut and sapid stuff, as Chablis will go, from such a climat and handled so. Acidity runs rampant and travels quickly up and down and into parts of the mouth that stand up to take notice. Sharp and focused Chablis.

    "The art of Rosé is the art of understatement, the art of creating a drinkability so complete that it almost contrives to efface its own origins. Almost. Yet it's a mark of the greatness of this rosé that those origins do linger - namely the distinguished clay-marl terraces of Bandol, and the contentment of the Mourvedre which so relishes growing there. This is a deeper salmon than many of its peers, with scintillatingly peachy-floral fruits. The origins come through most clearly in the palate, with its sustained shaping structure from those contented Mourvedre vines. The Grenache, meanwhile, has brought wealth and fleshy Cinsault charm. It adds up to an irresistible whole."

    Considered by many to be the best Fiano producer, Colli di Lapio's 2017 Fiano di Avellino is pale straw-green. A powerful and penetrating wine that finishes long and with rising complexity.
