Cave Spring Vineyard’s Dolomite tier of wines is produced in limited quantities from the winery’s eponymous vineyard, perched high on the gentle slopes of the Niagara Escarpment’s Beamsville Bench. The line-up includes the ‘core four’ vinifera varieties that best suit Cave Spring Vineyard’s terroir, and that Cave Spring has focused on since its inception in 1986, including Riesling, Chardonnay, Pinot Noir and Cabernet Franc. A sparkling wine made entirely from Chardonnay rounds out the selection. Available exclusively through the winery, the Dolomite collection is a favorite of Ontario wine consumers and professionals as an authentic, high value expression of Niagara’s cool-climate terroir, with the wines frequently finding their way onto the lists of many of the provinces most innovative restaurants.

     Tasting Notes:

    3 x 2018 Riesling Dolomite
Aromas of yellow plum, pink grapefruit and anise lead the way, with hints of ginger spice and gun flint in behind. The palate is dry, medium bodied and rich in feel, with ripe citrus and stone fruit flavours underpinned by a firm, stony texture and elegant, well integrated seam of acidity. The finish is intense and mouthwatering, replete with white peach, nectarine, cantaloupe and a hint of spice.

    Alc/Vol 11.0%
    RS 8.0 g/L

    3 x 2018 Chardonnay Dolomite
The nose is quite perfumed, with aromas of orange blossom, honeycomb, ginger and cinnamon at the fore and notes of Bosc pear, cantaloupe and flint in behind. Dry and medium bodied, the palate is succulent yet round up front, with a saline and mineral in the middle, with a firm, stony texture. This mineral core draws into a crisp, juicy finish of ripe blood orange along with notes of allspice and wet stone.

    Alc/Vol 12.5%
    RS <2.0 g/L

    3 x 2018 Pinot Noir Dolomite
The nose is highly perfumed with lifted red berry and black cherry fruit alongside nuances of cedar and spice. The palate is medium bodied with a rounded, juicy attack followed by cranberry and red cherry flavours along with a distinct note of tea in the middle. Fine-grained tannins culminate at this point, tapering down on the finish alongside succulent Damson plum fruit and cedar-spice complexity.

    RS <2.0 g/L

    3 x 2017 Cabernet Franc Dolomite
A dense, saturated nose of macerating blackberry, cassis and plum, with notes of blacktop, crushed stone and mint in behind. The palate displays a core of succulent yet brooding, dark berry fruit that melds with firm, fine-grained tannins toward the middle. A seam of red currant fruit brightens the wine, carrying into a powerful yet refined finish with notes of tar, cracked pepper and mineral.

    3 bottles x 2018 Rosé
    3 bottles x 2018 Sauvignon Blanc
    3 bottles x 2016 Pinot Noir

3 bottles x 2017 Cuvée Winona VQA Niagara Peninsula

    2018 Rosé

"A more laid back, complex, earthy, rusty - oxidative rosé here, with significant depth and presence on the palate. It comes across as a very genuine wine, also with impressive length and complexity." 91 points - John Szabo MS, Winealign, June 2019

    2018 Sauvignon Blanc

"A brand new release of the 2018 Sauvignon Blanc: picked relatively early, 18 hours on skins before pressing, fermentation in stainless steel, with a portion aged in neutral barrels for four months and the remainder in stainless steel. The wine is pale straw in the glass, crisp and fresh, with hints of grass, white flowers, lemon-lime and yellow melon. It's dry, with bright acidity, and add a whisper of white grapefruit and white peach on the palate. A charming wine, delicate and nuanced, far from the heavy vegetal side of the grape — perhaps moving towards a uniquely Niagara expression of the variety?" 90 points - Tim Appelt, WineDiscovery, April 2019

    2016 Pinot Noir

"From de-classification choices made in the winery, the NP pinot noir is a blend of Lowrey and Senchuk vineyard fruit that didn’t make it into the single-vineyard bottles. Falls somewhere not precisely calculated in the 12-18 months barrel age time for fruit sweet and structured, elevated into the ether tonal zone and ready to please, if you please. Take some time and realize the dream, of pinot noir made the right way from an agglomeration out of all the correct places and spaces." 90 points - Michael Godel, Winealign, March 2019

    2017 Cuvée Winona

This blended wine over-delivers massively for the price. The nose is pronounced with dried cranberries, lavender, licorice, cocoa, cedar, and blueberries that the palate replicates and follows with raspberry, vanilla, and rich tannins. It is perfectly drinkable now but will age well over the next 5-8 years. Great with burgers, cured meat, and hard cheese.

A blend of Redstone Vineyard Merlot, Redstone Vineyard Cabernet Sauvignon and Redstone Vineyard Cabernet Franc. This estate wine is full bodied with supple tannins and structure that would benefit from decanting before serving, but is highly approachable in its relative youth. Aromas of cassis, plum, basket fruits and sweet wood are prevalent on the nose. The palate is alive with notes of black fruit, blueberries and tart raspberries and are soon followed by hints of savouriness.

    Tawse Winery

    12 x 750 ml

Breads, Cured Meat, Red Meat, Roasted Vegetables

Here's a compelling, varietally accurate Cabernet Franc from Tawse, that shows the true character of Niagara Cabernet Franc. We love the edge of green herbs, that hint of green pepper, and the vibrant core of raspberry, blackberry and black currant fruit, all backed by a cedary, twiggy undertone. The palate carries the fruit and herbs with bright acidity and very fine but persistent tannins, that linger with the fruit on the cedary finish. Firm, elegant and full of life.

    Redstone Winery

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Cured Meat, Hard Cheese, Red Meat

The fruit for this Cabernet Franc is sourced exclusively from the Redstone Estate vineyard. Planted in 2010 this is the seventh growth and fourth har- vest from this high-density, low-yielding 6 acre block. The nose is ripe with red currants, plums and cherry cola. Savoury hints of earthy beets and fresh sage follow with allusions to graphite and dusty gravel . Tannins are firm and give balance to the warming alcohol.

At WineOnline.ca we travel the world to ensure we can offer our clients the best red wine, along with the best red wine to be found anywhere. There are all sorts of types of red wines. To name some we have, dry red wine, sweet red wine, full bodied red wine, medium bodied red wine, light red wine, tannic red wine and structured red wine. There is a litany of words used to describe red wine types. There are 10’s of thousands of red wines produced all over the world. There are 1000's of different red grape varietals. Italy, on its own, has over 2000 indigenous grape varietals used to produce red wines of differing style. The most famous grape varietals used in the productions of top red wines are likely those from Bordeaux which include; Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot. Pinot Noir is another very popular red wine varietal which is the only red grape they use for red wine production in Burgundy. In Burgundy, they do not even label the wines with the varietal, but rather the vineyard from which the grapes were grown. A few of the famous ones are Romanee Conti, La Tache, Vosne Romanee, Nuits St Georges, but there are many more good red wine types. At WineOnline.ca, one of our many, but perhaps our most important, job is to taste as many of these wines as possible, and bring in the best, along with the best values, in order to make them available to our clients. It's a tough job, but somebody has to do it.

When it comes to red wine, people’s preferences can be all over the map. Some people choose to take the safe road when it comes to drinking red wine. We do not advocate this approach. Different red wine is going to be appropriate for different times of the day/night/evening etc. The food you are eating is going to affect the taste of your red wine and the taste of your red wine is going to change the flavour of your food. The trick is to find the best red wine takes some experimentation. Don’t just go with the tried and true as you are missing out. Pinot Noir with your fish can be delectable. Nebbiolo with lamb is divine. How could you not love a little Chianti, (Sangiovese), with your eggplant Parmesan? We encourage experimentation. We consider it our job, to help you improve your wine life.
