    2017 Cabernet Merlot
    This smooth red is bursting with notes of ripe red berry fruit, black cherries, and plum. The palate is rich with flavours of cherry, pomegranate, hints of spice and smoky vanilla undertones.

    Green apple and citrus are apparent on the nose with a touch of floral aromas. Intense citrus flavours are complemented by strawberry and raspberry notes on the palate. Subtle tannins are present along with a refreshing acidity to balance the finish of the wine.

    All Cave Spring Vineyard wines are certified for their origin by the Vintners Quality Alliance of Ontario (VQA) and for environmental practices by Sustainable Winemaking Ontario (SWO). Our portfolio follows the VQA appellations and sub-appellations from which they originate, reflecting our deep commitment to provenance and terroir in our wine growing philosophy. Accordingly, our wines are organized into the four tiers – Regional, Dolomite, Estate and CSV/Proprietary.


    Tasting Notes:


    2019 Cave Spring Chardonnay

    Scents of musk, pine resin and ripe cantaloupe, with hints of fresh wax, cinnamon, ripe apricot and tangerine. Palate Full bodied with a round attack tinged with orange pith; mineral acidity builds to tighten the mid-palate, bringing tension to the wine's rich, marmalade fruit and velvety texture; the finish is generous and persistent, with intense flarours of ginger, nutmeg, pear tart and orange pulp.


    Best consumed 2021 through 2024; will hold through at least 2026. Pairs with poached salmon with cream sauce, pan-fried shellfish, cornish hen, roasted chicken, pork with apples, quinoa-stuffed butternut squash.

    2018 Cave Spring Chardonnay Estate 

    Aromas of red apple, vanilla bean, fresh cream and clementine greet the nose, with cinnamon and clove in behind. The palate dry and full bodied, with a plush, distinctly mineral attack and mid-palate showing seamless integration of acidity, extract and body. Rich, precise and well defined throughout, a delicate salinity emerges to lift the wine's round, supple feel, giving freshness to the wine's persistent, velvety finish. 


    Best consumed 2020 through 2023; will continue to develop through at least 2025. Pairs with crispy shrimp, crab-stuffed ravioli, grilled tempeh with roasted cauliflower, pan-seared halibut, roast capon, blanquette de veau.

    2019 Cave Chardonnay CSV
    Produced from the finest micro-parcels of mature vines at the estate, our CSV wines embody our highest commitment to quality and authenticity. The nose is highly perfumed withorange marmalade, allspice and mandarin predominate, with hints of honeysuckle and wet stone. Dry and full bodied; the attack is rich in extract and lightly granular texture with ripe Anjou pear fruit; succulent cantaloupe and plush bee's wax tones fill the middle, lifted by a streak of saline acidity and underpinned by the wine's firm, stony structure; the salinity pushes vigorously onto a long finish of Asian pear, lemon pith and meringue.


    Best consumed 2021 through 2026; will continue to develop through at least 2028. Pairs with grilled or baked wild salmon, lobster with wild rice, lentil-Parmesan polpettes, roasted goose, baked squash or sweet potato dishes.

    2017 Cabernet Sauvignon
    This Niagara red wine displays a rich garnet colour that boasts cassis, plum, vanilla and oak aromas on the nose, leading to array of flavours on the palate including dark cherries, anise, and well integrated oak tones. This Cabernet Sauvignon is a very well balanced red that can cellar 5-7 years.


    2016 Merlot
    Inky purple in colour, this full bodied Merlot from Lakeview Cellars shows notes of coffee, blueberry, and black cherry on the nose followed by a rich palate of blackberries and a hint of chocolate covered espresso beans.

    2017 Malbec
    Deep violet in colour with complex aromatics, this full-bodied Malbec boasts notes of pomegranate, cassis and a hint of coffee on the nose. The palate is rich with flavours of vanilla oak spice, rich purple plum and blackberries leading to an elegant finish.


    2019 Sauvignon Blanc
    The fruit harvested for this Sauvignon Blanc comes from 5 acres of mature Niagara vines that the Tregunno family has been farming for four generations. This Lakeview Cellars white wine shows traditional notes of tropical fruits, gooseberry and melon which is also present on the palate along with intense citrus flavours.


    2019 Viognier
    This Niagara Viognier is aromatic and easy-drinking, displaying notes of fresh peach, orange blossom and exotic fruit. The finish leaves you with soft floral tones and touch of sweet tangerine.


    2017 Barrel Aged Chardonnay
    Crafted in the Niagara Peninsula, this elegant, barrel-aged Chardonnay displays enticing aromas of vanilla and lemon curd. The palate is lush with a backbone of bright acidity boasting full flavours of apple and pear leading to a buttery, opulent finish.

    "We always want Sauvignon Blanc to reflect our unique Niagara terroir and this wine shows it in spades. 2019 was a cool and even growing season, resulting in very intense aromas of lime-leaf, kiwi, passionfruit, and gooseberry. The palate has fresh acidity, with more kiwi, lime and passionfruit, but also lovely tropical mango, starfruit and a hint of mint and tarragon. The barrel and lees aging has helped build an intense and long finish with a pleasant flinty note. Drink now or over the next 3 years. Enjoy with pan-fried halibut, fresh tomato & anchovy-paste pasta, or lemon &amp; herb roasted chicken."


    2017 Pinot Noir

    "From de-classification choices made in the winery, the NP pinot noir is a blend of Lowrey and Senchuk vineyard fruit that didn’t make it into the single-vineyard bottles. Falls somewhere not precisely calculated in the 12-18 months barrel age time for fruit sweet and structured, elevated into the ether tonal zone and ready to please, if you please.     2019 Cuvée Winona

    "This blended wine over-delivers massively for the price. An amazingly intense nose of plum, strawberry, blackberry, cassis and mulberry is layered over a backdrop of tobacco-leaf, cracked white pepper, lavender, and licorice.  On the palate, the intensity continues by adding wild-blueberries, freshly-turned earth and bacon with wisps of moss, raspberry and mocha fading in and out draped over powerful but soft tannins. It is immediately satisfying to drink now with a good decant, but it will certainly age well over the next 5-8 years. Great with burgers, cured meat, and hard cheese."

    3x 2019 Va-et-Vient Meritage Ontario VQA

    A blend of Cabernet Franc, Cabernet Sauvignon and Merlot, this is our first Meritage blend. It is an aromatic wine combining the Cabernets' spice with round aromas of dark fruit. The palate is meaty, but firm; it’s full of energy, yet it brims with dark red fruit you can bite in and remains positively vibrant. The density of flavours permeating the mouth is unmistakable and the finish is spicy, bright and invigorating.


    2019 Va et Vient is a blend of 48% Cabernet Franc (Home Farm Vineyard), 39% Cabernet Sauvignon (Redfoot Vineyard) and 13% Merlot (Redfoot Vineyard). All three grapes were processed as 100% destemmed fruit and fermented in a combination of large concrete tanks and oak vats. Fermentations by indigenous yeast proceeded steadily and completed by mid December 2019. The wines aged separately in their fermentati on vessels on lees and without racking until March 2020 when they were blended and left to age for an additional two months.

    3x 2019 Lilia Cabernet Franc
    The second vintage of Lila and our third time working with the Lemberger grape -are we ever in love?! Beguilingly purple colour -deeper and sultrier than the original vintage, yet still shiny and lush. It streams out of the glass with a perfume that is pretty and floral, yet spicy and meaty too. It fills the palate with an unusual, dense and piquant combination of flavours -and still drinks with ease. The quintessential table wine and then some -approachable, but full of mysteries. It'll take you through all the seasons without blinking an eye and it'll be fantastic with a huge variety of foods.


    2019 Lila is a blend of 69% Lemberger from Knizat vineyard in NOTL 15% Cabernet Sauvignon, 14% Cabernet Franc, 2% Merlot all sourced from Redfoot vineyard in Lincoln Lakeshore. All the grapes were fermented separately as 100 % destemmed fruit and aged in concrete (Lemberger), old oak foudres (Cabernet Franc and Cabernet Sauvignon) and old oak demi-muid (Merlot). The wines spent 6 months aging on their primary lees, at which point they were blended for an additional 2 months of aging in stainless-steel. Bottled May 5, 2020 - unfined and unfiltered, of course.

    3x 2018 Irrévérence Blanc
    A blend of Riesling, Chardonnay and Gewürztraminer, that was also graced by 30% noble rot in the Gewurtz portion, this is a completely dry wine that has stolen our hearts and twisted our minds in our exploration of skin-fermentation. A wine with a rich and indulging perfume that shines with golden nuance and honeyed notes. The palate flows in unexpected ways - satiating and unrelenting; rich and smooth, yet lively. Exceptionally dynamic with a wide variety of foods.


    2018 Irrévérence is a blend of Riesling from Butler’s Grant vineyard in 20 Mile Bench (35.4%), Chardonnay from Redfoot Vineyard in Lincoln Lakeshore (25.1%) and Gewurztraminer from Knizat vineyard in NOTL (39.5%). The fruit was respectively picked on October 7th, September 27th and October 8 th and 29th (two separate picks for the Gewurtz). The Chardonnay was fermented and aged in foudres, the Riesling in foudre and stainless steel. A portion of the Gewurztraminer was co-fermented with Riesling on skins in qvevri for a total of 6 months, while the rest (carrying 30% noble rot) fermented to complete dryness in a foudre. The wines aged separately in their fermentation vessels on primary lees for 12 months, before being blended for an additional 12 months of aging in a combination of concrete and foudres.

    3x 2018 Fougue Chardonnay
    The second vintage of our Fougue is here and allowing us to explore a Chardonnay of distinctly different character than the Dix-Neuvième. Supple and lush, yet translucent and pulsing with vibrant energy, weaving through an unmistakable combination of rich fruit and firm salinity that we’ve come to know from our Home Farm vineyard. This is a wine that will readily give ample pleasure now, but has many years ahead in its life.


    2018 Fougue is 100% Chardonnay from our high density, Home Farm vineyard in Creek Shore appellation. The fruit was harvested on September 18th, 20th and 21st 2018 and after careful sorting, it entered the press as 100% whole clusters. Fermentation proceeded steadily in a combination of old foudre and concrete, and completed by early 2019. The wine aged in its fermentation vessels on primary lees for a total of 23 months. 2018 Fougue was bottled unfiltered and un-fined on September 9th, 2020.

This is a bottle of explosive, yet seamless power, built on a set of beautiful contradictions that we will continue discovering for many years.

    3x 2017 Chardonnay Dix-Neuvieme
    The 2017 vintage gave us wines of classic character and symmetric proportions. Cuvée Dix-Neuvième is a persuasive example for these qualities and a wine that even in its youth shines with poise and class. The bouquet is open, fleshy, but understated.The palate is rich in supple orchard fruit and has equal amounts of translucency, gentleness and arresting precision all leading to a compact and persistent finish.

At we travel the world to ensure we can offer our clients the best red wine, along with the best red wine to be found anywhere. There are all sorts of types of red wines. To name some we have, dry red wine, sweet red wine, full bodied red wine, medium bodied red wine, light red wine, tannic red wine and structured red wine. There is a litany of words used to describe red wine types. There are 10’s of thousands of red wines produced all over the world. There are 1000's of different red grape varietals. Italy, on its own, has over 2000 indigenous grape varietals used to produce red wines of differing style. The most famous grape varietals used in the productions of top red wines are likely those from Bordeaux which include; Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot. Pinot Noir is another very popular red wine varietal which is the only red grape they use for red wine production in Burgundy. In Burgundy, they do not even label the wines with the varietal, but rather the vineyard from which the grapes were grown. A few of the famous ones are Romanee Conti, La Tache, Vosne Romanee, Nuits St Georges, but there are many more good red wine types. At, one of our many, but perhaps our most important, job is to taste as many of these wines as possible, and bring in the best, along with the best values, in order to make them available to our clients. It's a tough job, but somebody has to do it.

When it comes to red wine, people’s preferences can be all over the map. Some people choose to take the safe road when it comes to drinking red wine. We do not advocate this approach. Different red wine is going to be appropriate for different times of the day/night/evening etc. The food you are eating is going to affect the taste of your red wine and the taste of your red wine is going to change the flavour of your food. The trick is to find the best red wine takes some experimentation. Don’t just go with the tried and true as you are missing out. Pinot Noir with your fish can be delectable. Nebbiolo with lamb is divine. How could you not love a little Chianti, (Sangiovese), with your eggplant Parmesan? We encourage experimentation. We consider it our job, to help you improve your wine life.
