Attractive notes of spice, toast and a touch of white pepper add warmth to the flavourful, satiny finish.

Vinified partly in barriques from some of our oldest, lowest yielding vines, it retains the clarity of fruit and mineral nuances that Chardonnay from our estate is renowned for.

    Spectacular value on this double 90 point, back vintage Niagara wine.  Properly treated, high quality fruit leads this elegant, light sytle of Chardonnay.  Aromas of baked apple and honeyed melon finish with slight spice and toasty oak. 

    "Masterfully made: great value too. A well-rounded, balanced Niagara Chardonnay: not heavy or wimpy, just right. Toasted almond and golden apple aromas. Nice mouth-feel. Pair with roast turkey or chicken. Chardonnay food pairings: roast chicken, lobster in butter, corn dishes, pork, fried chicken, almonds, brie, camembert."

    "The 2016 Chardonnay Estate is a blend of grapes form three vineyards parcels at Cave Spring Vineyards, ranging from 32 to 38 years of age. This is a ripe yet dialed-in expression of Chardonnay, which shows the warmth of the vintage but doesn't lose its brightness or purity. Thoughtful management in the cellar called for 50/50 blend of tank and barrel fermented lots, with 20 percent new French oak and an 80/20 mix of selected and indigenous yeast strains. It calls to mind some of the more showy Cave Spring vintages from the past - 2003, 2007 and 2010 - but with more harmony and lengths. Drink now to 2024."
