  1. New RAW Savignan VQA by Big Head 2017

    $480.00

    Big Head

Canada (Canada), Niagara (Canada), Ontario (Canada)

    12 x 750 ml

Salted or Marinated Mushrooms, Suckling Pig, White Meat

Savagnin is a cool grape, but can be quiet if not treated properly. It Needs some oxidation, or flor yeast, or some kind of funk to give it aromatics. This example is expressive and fresh. The nose is lightly floral, with plenty of citrus, pear and banana tones and a hint of ginger lift. The palate is dry, with a fresh acidity and long finish. > Learn More

"Made in concrete, unfiltered, no skin contact. So textured and beautiful with sweet pear fruit and some table grape notes. Has a smooth, mineral texture and a nice mouthfeel. Shows incredible texture, with tangerine and spice on the finish."

The 2017 vintage created classic Niagara Chardonnays with refreshing acidity and elegant minerality and this Chardonnay, made with the highest quality fruit from our very own Limestone Vineyard, is no exception. The medium-bodied Chardonnay was barrel fermented using indigenous yeasts and aged 12 months in French oak. The nose is pretty, with enticing notes of white flower, tropical fruit, a hint of flintiness On the palate, apple and ripe pear dominate, rounded out by lush texture alluding to stone fruit and pineapple, a hint of toasty oak and sweet nuttiness linger on the lengthy finish.

    Tawse Winery

"This is a tropical and floral beauty on the nose—pineapple, guava, honeysuckle, rose water—with a back drop of mineral notes. This is medium-bodied with a nice roundness on the palate but absolutely no residual sugar, leaving all the stage to cantaloupe and pineapple flavours, bright citrus acidity, energetic minerality and a ginger hint emerging in the long delectable finish. This gem will shine alongside steamed mussel or a seared red tuna salad with an Asian flair."

    3 bottles x 2017 Pinot Noir

3 bottles x 2017 Cuvée Winona VQA Niagara Peninsula

    2019 Rosé

"Our house style of rose is bright and refreshing with a pale colour and great fruit. The nose has vibrant red fruits such as, sour cherry, raspberry, watermelon with complimentary savoury notes with hints of floral orange blossom. The palate supports the nose with rich texture and a delicate finish. This bright, refreshing Rose was built for warm summer days and good company!

    2018 Sauvignon Blanc

"A brand new release of the 2018 Sauvignon Blanc: picked relatively early, 18 hours on skins before pressing, fermentation in stainless steel, with a portion aged in neutral barrels for four months and the remainder in stainless steel. The wine is pale straw in the glass, crisp and fresh, with hints of grass, white flowers, lemon-lime and yellow melon. It's dry, with bright acidity, and add a whisper of white grapefruit and white peach on the palate. A charming wine, delicate and nuanced, far from the heavy vegetal side of the grape — perhaps moving towards a uniquely Niagara expression of the variety?" 90 points - Tim Appelt, WineDiscovery, April 2019

    2017 Pinot Noir

"From de-classification choices made in the winery, the NP pinot noir is a blend of Lowrey and Senchuk vineyard fruit that didn’t make it into the single-vineyard bottles. Falls somewhere not precisely calculated in the 12-18 months barrel age time for fruit sweet and structured, elevated into the ether tonal zone and ready to please, if you please. Take some time and realize the dream, of pinot noir made the right way from an agglomeration out of all the correct places and spaces." 90 points - Michael Godel, Winealign, March 2019 (2016 Vintage)

    2017 Cuvée Winona

This blended wine over-delivers massively for the price. The nose is pronounced with dried cranberries, lavender, licorice, cocoa, cedar, and blueberries that the palate replicates and follows with raspberry, vanilla, and rich tannins. It is perfectly drinkable now but will age well over the next 5-8 years. Great with burgers, cured meat, and hard cheese.

This 2017 Quarry Rd Gewurztraminer is a show stopping example of an aromatic wine in the Tawse portfolio. On the nose are complex and ambrosial aromas of fresh peach, rose petal, and ginger spice. The creamy mouthfeel envelops the palate with flavours of candied ginger, peaches, and lime zest. There is a noticeable sweetness on the finish.

    Château Des Charmes

    12 x 750 ml

    Pasta, Vegetables, White Meat

“Bright golden colour. Tropical fruit abounds with pineapple and ripe melon alongside pronounced toasty oak. This is ripe and buttery expression of Chardonnay with lots of spicy wood and even notes of chalky minerality coming through. This wine is still youthful and though the wood is presently at the forefront, there is ample concentration of fruit for the elements to integrate beautifully.”

    12 x 750 ml

Rich Fish, Risotto, Salad, Vegetables, White Meat

"Wow! This is an intense, nervy riesling with all kinds of apple, citrus and floral (jasmin) character. It is medium weight, just off dry but so well balanced in terms of acid and sugar, with really impressive fruit intensity and drive. It is bracing and almost relentless in terms of flavour depth. There is a hint of CO2 adding to the brightness. Some grapefruity bitterness on the finish. Excellent to outstanding length."

"Aromas of lemon-lime, floral notes and notions of minerality provide segue to a medium-bodied, nicely textured stream of refreshing palate flavours with Key lime, lemon pie filling and grapefruit pith to the fore. It finishes crisp and clean with palate replays through the lingering, lip-smacking aftertaste. Give this a go with myriad fish and seafood, grilled, baked or poached."

Cave Spring Vineyard’s Dolomite tier of wines is produced in limited quantities from the winery’s eponymous vineyard, perched high on the gentle slopes of the Niagara Escarpment’s Beamsville Bench. The line-up includes the ‘core four’ vinifera varieties that best suit Cave Spring Vineyard’s terroir, and that Cave Spring has focused on since its inception in 1986, including Riesling, Chardonnay, Pinot Noir and Cabernet Franc. A sparkling wine made entirely from Chardonnay rounds out the selection. Available exclusively through the winery, the Dolomite collection is a favorite of Ontario wine consumers and professionals as an authentic, high value expression of Niagara’s cool-climate terroir, with the wines frequently finding their way onto the lists of many of the provinces most innovative restaurants.

     Tasting Notes:

    3 x 2018 Riesling Dolomite
Aromas of yellow plum, pink grapefruit and anise lead the way, with hints of ginger spice and gun flint in behind. The palate is dry, medium bodied and rich in feel, with ripe citrus and stone fruit flavours underpinned by a firm, stony texture and elegant, well integrated seam of acidity. The finish is intense and mouthwatering, replete with white peach, nectarine, cantaloupe and a hint of spice.

    3 x 2018 Chardonnay Dolomite
The nose is quite perfumed, with aromas of orange blossom, honeycomb, ginger and cinnamon at the fore and notes of Bosc pear, cantaloupe and flint in behind. Dry and medium bodied, the palate is succulent yet round up front, with a saline and mineral in the middle, with a firm, stony texture. This mineral core draws into a crisp, juicy finish of ripe blood orange along with notes of allspice and wet stone.

    3 x 2018 Pinot Noir Dolomite
The nose is highly perfumed with lifted red berry and black cherry fruit alongside nuances of cedar and spice. The palate is medium bodied with a rounded, juicy attack followed by cranberry and red cherry flavours along with a distinct note of tea in the middle. Fine-grained tannins culminate at this point, tapering down on the finish alongside succulent Damson plum fruit and cedar-spice complexity.

    3 x 2017 Cabernet Franc Dolomite
A dense, saturated nose of macerating blackberry, cassis and plum, with notes of blacktop, crushed stone and mint in behind. The palate displays a core of succulent yet brooding, dark berry fruit that melds with firm, fine-grained tannins toward the middle. A seam of red currant fruit brightens the wine, carrying into a powerful yet refined finish with notes of tar, cracked pepper and mineral.
