    Foie gras, Sweets, Tarte tatin

Very pretty, candied strawberry and raspberry, high-toned violets on the nose. This is an excellent example; one of the best red Icewines I've come across, without the concentrated bell pepper essence that often characterizes Icewines made as a last resort when fruit didn't ripen sufficiently to make table wine. Long finish. Well balanced. Superb. Harvested during the night at temperatures between -10° and -12°C. Juice from the frozen berries was slowly removed using a traditional wooden basket press to extract the most color possible, then settled in stainless steel tanks. The juice was fermented at cool temperatures using selected yeast to retain volatile aromatics. After a short aging period in stainless steel, the wine was settled, filtered, and bottled by gravity.

  3. New Vidal Icewine VQA (375 ml) by Château Des Charmes 2012

    $47.85

    Château Des Charmes

Canada (Canada), Niagara (Canada), Ontario (Canada)

    1 x 375 ml

    Sweets, Tarte tatin

Vidal is the most common grape variety to make Icewine. It's been used to make several different styles of Icewine but we like it best simply, straight forward and intense. When you first put your nose into the glass your head is filled with thoughts of honey, apricot and flower gardens in full bloom. It coats your mouth and you feel it well after you swallow. It's definitely sweet but the balancing acidity is telling of the care that went into its making. Aged Vidal Icewine is an acquired taste so we like to recommend that you enjoy it while it still has the fresh floral notes - up to about 5 years old. > Learn More

Mead and honeysuckle aromas greet the nose while flavours of peach and pear candy erupt onto the palate. A pleasing citrus spice balances the wine’s sugar and is followed by a long, tantalizing caramel and pineapple finish.

This rare, succulent dessert wine announces itself to the nose with scents of strawberry and pomegranate candy. Flavours of home-cooked strawberry jam and field berries weave together and have just the right balance of acidity to keep the palate perked and attentive. The long, elegantly sweet finish leaves the palate with memories of smooth burnt cherries and a longing for more!

Try this wine with light and dark chocolate, or as a substitute for dessert.

    Château Des Charmes

    1 x 375 ml

    Foie gras, Sweets, Tarte tatin

We pick our Icewine at -10°C or colder to make sure every ounce of water left in the grapes is completely frozen. We don’t want to dilute this incredible wine in any way. Once in the Harvest Room we press the frozen bunches of grapes at up to 100 psi just to extract a few trickles of the thick and sweet juice. Because the juice is so cold and sweet we have to use aggressive yeast to start and maintain fermentation, which can take several months. The wine is sweet but is finely balanced with fruit flavours and a strong backbone of acidity. Riesling is one of the great white grape varieties with excellent aging potential. This wine is a terrific example. - Winemaker's notes

    1 x 375 ml

    Chocolate cake, Sweets, Tarte tatin

Cabernet has acclimatized extremely well to the Niagara Peninsula so it is a good candidate to make into Icewine. We tend these blocks of Cabernet like the others carefully managing the yields and of course keeping the bunches clean by removing any berries at the first signs of breakdown. Then we wait. And in late January, when the temperature dropped to -13ºC we hand-harvested the bunches by the light of the moon.

As the last drop of the opening pour fell from the bottle into my glass a heady note of fresh apple cider, buckwheat honey and Mandarin orange made my head snap around to gaze at the golden blush. The glass rested over 20 centimeters from my nose, still the wine jumped up and energetically reached out to grab my full attention. Wow. This wine will not be ignored, and really, why would you? On the palate the wine is pure elegance dancing seductively from sweet and savoury to “hit me again” pleasure.

"Look for deep dried-and cooked-fruit aromas: fig, date and baked apple drizzled with caramel. The silky, remarkably light palate shows plum-flesh tartness at first, then dried dates and figs, and finally a long mocha finish accented by cinnamon, clove and orange peel."
