This wine originates from selected vineyards in the western stretches of the Niagara Peninsula, where onshore breezes from nearby Lake Ontario slowly desiccate Riesling grapes in late autumn. Further concentrated on the vine by early winter frosts, these clusters produce a luscious, sweet wine with an elegant balance of acidity.
Sweet and medium in body; rich and stony up front with comb honey and elderflower tones; plush notes of pitted apricot, apple sauce and vanilla custard are restrained by firm, stony textures and a tense, focused seam of saline acidity in the middle; this mineral-salt edge powers a deep, savoury finish of lemon pith, candied ginger and sage leaf accented by hints of rosewater and toasted meringue.

Recalling the joy his father and son had found tapping into their rural Italian roots to revive a small vineyard in the 1960s, John Pennachetti Sr knew that the original abandoned orchard set against the Niagara Escarpment’s limestone cliffs had the potential to be something so much more for his family. Today, more than four decades after John and his sons took a chance and planted some of Niagara’s first Riesling and Chardonnay vines on that plot of land, Cave Spring Vineyard serves as a constant reminder of the good things that can happen when the past is honoured in forging a new future.
