The traditional, time-honored “Appassimento” process has been used for centuries, historically from Italy’s Veneto region in the production of its famous Amarone reds. Here, the technique of drying grapes off the vine, is applied to the rich, ripe grapes of Puglia. This process helps concentrate the fruit flavors. The final result is a wine able to express both fresh, fruity notes, together with more complex flavors coming from the drying of grapes.
